Fermentation and maceration are carried out at a controlled temperature of 26-28 ° C in stainless steel tanks. Fermentation is stopped by lowering the temperature before all natural sugar is converted into alcohol. Sub-lactic fermentation occurs at the end of alcoholic fermentation.
